---++ Chicken Caccitatore
---+++ Ingredients
   * 2 onions, thinly sliced
   * 1 flat boneless chicken thighs, skinned
   * 2 cans diced tomatoes
   * salt and pepper
   * 2 cloves minced garlic
   * 1 c white wine or broth
   * 3 Tbsp capers
   * 20 pitted Kalamata olives, coarsely chopped
   * fresh parsley or basil, a "bunch"
 
   * 16 oz pasta cooked according to pkg directions
---++ Prep
   1 Place onion in crockpot and cover with chicken
   2 in a bowl stir together tomatoes, salt, pepper, garlic and wine, pour over chicken
   3 cover and cook on low for 7-8 hours
   4 stir in capers, olives and herbs just before serviing
   5 serve over cooked pasta
