Chicken with 40 Cloves of Garlic

Ingredients

2 Tbsp butter
40 cloves garlic (peeled) -- about 4 heads
3-3.5 lbs chicken thighs, skinless
2 onions, finely chopped
4 stalks celery, chopped
1 tsp dried thyme
1 Tbsp salt
1/4 tsp nutmeg
1/2 c white wine or vermouth

Melt butter over medium-low heat. Add garlic and cook, stirring often until it begins to soften and turn golden. Remove garlic to slow cooker.

Brown chicken on medium heat and add to slow cooker.

Add onion and celery and cook until softened. Add seasonings and cook one minute. Add wine/vermouth and bring to a biol. Pour over chicken.

Cook on low for 5-6 hours or high for 2.5-3 hours.

Serve with mashed potatoes
