Chicken with 40 Cloves of Garlic

Ingredients

  • 2 Tbsp butter
  • 40 cloves garlic (peeled) -- about 4 heads
  • 8 boneless, skinless chicken thighs
  • 2 onions, finely chopped
  • 4 stalks celery, chopped
  • 1 tsp dried thyme
  • 1 Tbsp salt
  • 1/4 tsp nutmeg
  • 1/2 c white wine or vermouth

PREPARATION

  1. Melt butter over medium-low heat.
  2. Add garlic and cook, stirring often until it begins to soften and turn golden.
  3. Remove garlic to slow cooker.
  4. Brown chicken on medium-high heat and add to slow cooker.
  5. Add onion and celery and cook until softened.
  6. Add seasonings and cook one minute.
  7. Add wine/vermouth and bring to a boil; pour over chicken.
  8. Cook on low for 5-6 hours or high for 2.5-3 hours.
  9. Serve with mashed potatoes
