Chilled Avocado Soup
INGREDIENTS
- 6 ripe avocados, halved, seeded, peeled
- 2 c chicken broth
- 1/2 c water
- 2 c half and half or light cream
- 1/2 tsp salt
- 1/4 tsp onion powder
- dash ground white pepper
- 2 Tbsp lemon juice
PREPARATION
- Place 3 avocados in blender with 1 c chicken broth and 1/4 c water.
- Process until smooth.
- Pour into glass bowl
- Repeat.
- Stir in remaining ingredients.
- Cover and refrigerate 3 hours or up to 24 hours.
- Stir before serving.
