Chinese Chicken Soup
INGREDIENTS
- 2 chicken breasts
- 6 cups (1.5 boxes) chicken stock
- 2 portobello mushrooms, sliced
- 1 celery rib, sliced
- 2 tsp jar garlic
- 1 tsp grated ginger
- 2 bok choy, shredded
- 2 Tbsp soy sauce
- 3 scallions, sliced
PREPARATION
- Combine stock, garlic and ginger.
- Add chicken breasts.
- Bring to a boil; simmer, covered, until chicken is cooked.
- Remove chicken.
- Add celery and mushrooms.
- Shred chicken, then add back in.
- Add bok choy, cook for 15 minutes.
- Add soy sauce.
- Serve garnished with green onion.
