Chinese Chicken Soup

INGREDIENTS

  • 2 chicken breasts
  • 6 cups (1.5 boxes) chicken stock
  • 2 portobello mushrooms, sliced
  • 1 celery rib, sliced
  • 2 tsp jar garlic
  • 1 tsp grated ginger
  • 2 bok choy, shredded
  • 2 Tbsp soy sauce
  • 3 scallions, sliced

PREPARATION

  1. Combine stock, garlic and ginger.
  2. Add chicken breasts.
  3. Bring to a boil; simmer, covered, until chicken is cooked.
  4. Remove chicken.
  5. Add celery and mushrooms.
  6. Shred chicken, then add back in.
  7. Add bok choy, cook for 15 minutes.
  8. Add soy sauce.
  9. Serve garnished with green onion.
