Cream of Spinach Soup

INGREDIENTS

  • 2 Tbsp butter
  • 2 tsp jar garlic
  • 1 sweet onion, chopped
  • 1/2 stalk celery
  • 1/2 bag spinach, coarsely chopped
  • 4 c chicken stock
  • salt and pepper to taste.
  • 1/2 c sour cream
  • 1/2 c heavy cream

PREPARATION

  1. Melt the butter in the red pot
  2. Add garlic and onion, saute 2 minutes.
  3. Stir in celery and spinach.
  4. Add the stock and cook for 20 mintues.
  5. Puree with the stick blender.
  6. Stir in sour cream and heavy cream.
  7. Season with salt and pepper.
