Cream of Spinach Soup
INGREDIENTS
- 2 Tbsp butter
- 2 tsp jar garlic
- 1 sweet onion, chopped
- 1/2 stalk celery
- 1/2 bag spinach, coarsely chopped
- 4 c chicken stock
- salt and pepper to taste.
- 1/2 c sour cream
- 1/2 c heavy cream
PREPARATION
- Melt the butter in the red pot
- Add garlic and onion, saute 2 minutes.
- Stir in celery and spinach.
- Add the stock and cook for 20 mintues.
- Puree with the stick blender.
- Stir in sour cream and heavy cream.
- Season with salt and pepper.
