Creamy BBQ Chicken

INGREDIENTS

• 2 Tbsp butter
• 4 chicken breasts
• 8 oz sliced mushrooms
• 1 onion, cut into strings
• 3/4 c sour cream
• 2 Tbsp barbecue sauce

PREPARATION

1. Melt 1 Tbsp butter in mondo skillet on medium-high.
2. Add chicken, cook 7-9 minutes on each side or till cooked through.
3. Remove chicken to plate.
4. Add remaining 1 Tbsp butter, the mushrooms, and the onion.
5. Cook until onions are crisp-tender.
6. Turn heat to low.
7. Add sour cream and barbecue sauce.
8. When hot, spoon over chicken
