Creamy Ranch Chicken Casserole
INGREDIENTS
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 Tbsp EVOO
- 2 chicken breasts, cut up and cooked
- 1 can condensed cream of chicken soup
- 1 can mild rotel
- 1 c ranch dressing
- 1 tsp chili powder
- 1.5 c shredded cheddar
- 12 corn tortillas, cut into strips
- 1 c coarsely crushed tortilla chips
PREPARATION
- Heat oven to 375
- Cook pepper and onion in oil in large skillet 5 minutes or until crisp-tender; remove from heat.
- Stir in chicken, soup, rotel, ranch, and chili powder.
- spread 1/3 of tortilla strips in 13" x 9" pan.
- Top with 1/3 chicken mixture and 1/3 cheese. Repeat layers twice.
- Bake 30 minutes or until heated through.
- Top with tortilla chips.
