Creamy Ranch Chicken Casserole

INGREDIENTS

  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 Tbsp EVOO
  • 2 chicken breasts, cut up and cooked
  • 1 can condensed cream of chicken soup
  • 1 can mild rotel
  • 1 c ranch dressing
  • 1 tsp chili powder
  • 1.5 c shredded cheddar
  • 12 corn tortillas, cut into strips
  • 1 c coarsely crushed tortilla chips

PREPARATION

  1. Heat oven to 375
  2. Cook pepper and onion in oil in large skillet 5 minutes or until crisp-tender; remove from heat.
  3. Stir in chicken, soup, rotel, ranch, and chili powder.
  4. spread 1/3 of tortilla strips in 13" x 9" pan.
  5. Top with 1/3 chicken mixture and 1/3 cheese. Repeat layers twice.
  6. Bake 30 minutes or until heated through.
  7. Top with tortilla chips.
