Curried Bean Soup
INGREDIENTS
1 quart mason jar with lid
1/2 c white beans (cannellini)
1/2 c red kidneys
1/2 c green split peas
1/2 c red lentils
1/2 c black beans
1/2 c great northern beans
1/2 c yellow split peas
1/2 c pintos
2 tsp chicken bouillion powder
2 tsp dried minced onion
2 tsp dried parsley
2 tsp curry powder
1 tsp garlic powder
1 tsp coriander
1/2 tsp salt
PREPARATION
In one quart mason jar, layer beans in order.
In a small zipper bag, combine remaining ingredients and place on top of beans.
Seal jar; attach instructions.
INSTRUCTIONS
Rinse beans and place in large pot.
Cover with water and soak overnight.
Drain beans and return to pot.
Add six cups water, cover, and bring to a boil on high.
Reduce heat and simmer 1-1/2 hours.
Add 2 cans diced tomatoes and seasoning mix.
Simmer another hour or until beans are tender.
