Curried Bean Soup

INGREDIENTS

  • 1 quart mason jar with lid
  • 1/2 c white beans (cannellini)
  • 1/2 c red kidneys
  • 1/2 c green split peas
  • 1/2 c red lentils
  • 1/2 c black beans
  • 1/2 c great northern beans
  • 1/2 c yellow split peas
  • 1/2 c pintos
  • 2 tsp chicken bouillion powder
  • 2 tsp dried minced onion
  • 2 tsp dried parsley
  • 2 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp coriander
  • 1/2 tsp salt

PREPARATION

  1. In one quart mason jar, layer beans in order.
  2. In a small zipper bag, combine remaining ingredients and place on top of beans.
  3. Seal jar; attach instructions.

INSTRUCTIONS

  1. Rinse beans and place in large pot.
  2. Cover with water and soak overnight.
  3. Drain beans and return to pot.
  4. Add six cups water, cover, and bring to a boil on high.
  5. Reduce heat and simmer 1-1/2 hours.
  6. Add 2 cans diced tomatoes and seasoning mix.
  7. Simmer another hour or until beans are tender.
