Dave Lieberman's Cornbread

Ingredients

• 2 (8 1/2-ounce) boxes corn muffin mix
• 1 cup milk
• 2 eggs, beaten
• 1 (8 3/4-ounce) can corn kernels, drained
• 1/2 cup grated Monterey jack

Preparation

1. Preheat oven as directed on box
2. Spray 13x9 pan with cooking spray or oil
3. Combine all ingredients
4. pour into pan and bake as directed on box for corn bread -- it may not be done so be prepared to bake it 5 or 10 minutes longer -- until just golden and top springs back when gently pressed,
5. let cool 10 minutes before cutting or it will fall apart.
