Dijon Lime Baked Chicken

Ingredients

  • 8 or so chicken thighs
  • 3 Tbsp Dijon mustard
  • 1 Tbsp light mayonnaise
  • 1 clove garlic, crushed
  • 1 lime zested and squeezed
  • 3/4 tsp pepper
  • salt
  • dried parsley flakes

Preparation

  1. Preheat oven to 400
  2. rinse the chicken and remove the skin and all fat. Pat dry. Place in a large bowl and season with salt
  3. in a small bowl mix mustard, mayonnaise, garlic, lime juice and zest and pepper. Mix well.
  4. Pour over chicken, toss well to coat.
  5. Spray a large baking pan with cooking spray. Place chicken in a single layer. Top with parsley flakes
  6. Bake about 40-45 minutes or until cooked through.
  7. finish under the broiler until it's golden brown. Serve with pan juices drizzled over top.
