---++ Dijon Lime Baked Chicken ---+++ Ingredients * 8 or so chicken thighs * 3 Tbsp Dijon mustard * 1 Tbsp light mayonnaise * 1 clove garlic, crushed * 1 lime zested and squeezed * 3/4 tsp pepper * salt * dried parsley flakes ---+++ Preparation 1 Preheat oven to 400 2 rinse the chicken and remove the skin and all fat. Pat dry. Place in a large bowl and season with salt 3 in a small bowl mix mustard, mayonnaise, garlic, lime juice and zest and pepper. Mix well. 4 Pour over chicken, toss well to coat. 5 Spray a large baking pan with cooking spray. Place chicken in a single layer. Top with parsley flakes 6 Bake about 30-35 minutes or until cooked through. 7 finish under the broiler until it's golden brown.
