Make the cake: place a rack in the center of the oven and preheat to 350. Lightly grease then flour cake pan. Shake out excess flour and set pans aside.
Place the cake mix, cocoa powder, buttermilk, food coloring, melted butter, eggs, 1 tsp of vanilla and the baking soda and vinegar in a large mixing bowl and beat with an electric mixer on low speed till the ingredients are incorporated, about 1 minute. Stop the machine and scrape down the side of the bowl with a spoonula. Beat for 2 minutes on medium, scraping the side again if needed.The batter should look well blended. Pour batter into pan and smooth the top with the spoonula. Place in the oven.
Bake for the time directed on the pakage -- the cake should slightly pull away from the edges and spring back when lightly touched. Let cool
Make the cream cheese frosting: Place thee cream cheese and butter in a large mixing bowl and beat with an electric mixer on high speed until light and fluffy, 1 to 2 minutes. Stop and scrape down the side with a spoonula. Add the teaspoon of vanilla and the confectioners sugar and beat on medium until well combined. Increase the speed to high and beat 1 minute longer.
When cake is completely cooled, frost with Cream Cheese Frosting.
