Glazed Carrots with Olives
INGREDIENTS
- 1 lb carrots, cut into 2" lengths, with big pieces halved lengthwise
- 1 Tbsp butter
- 1 tsp sugar
- 1/2 c pitted Kalamata olives, halved
- 2 Tbsp capers, drained
- 2 tsp minced chives
PREPARATION
- , Combine carrots, buter, sugar and 1/3 c water in large skillet.
- Cover, cook over high 8 minutes.
- If the water hasn't evaporated, cook 2-3 minutes uncovered until carrots are glazed.
- Add olives and capers, cook 1 minute to heat through.
- Sprinkle with chives.
