Guinness & Cheddar Mac & Cheese
INGREDIENTS
Topping
- 1 Tbsp butter
- 2 tsp garlic
- 1/2 c panko
- 1/2 tsp parsley flakes
Mac & Cheese
- 1 lb macaroni
- 2 Tbsp butter
- 2 Tbsp flour
- 2/3 c Guinness
- 1.5 c milk
- 1/2 c half-and-half
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbsp dijon mustard
- 2 oz cream cheese, cut into pieces
- 3.5 c grated sharp cheddar ( 14 oz )
PREPARATION
Topping
- In medium skillet on medium-low, melt butter.
- Add garlic, panko, and parsley flakes.
- Cook until the panko is lightly toasted and mixture is fragrant.
- Remove from heat; add salt and pepper to taste. Set aside.
Mac & Cheese
- Cook macaroni till just al dente. Reserve a cup of cooking water and drain.
- In red & white pot, melt butter on medium. Sprinkle in flour.
- Whisk for one minute.
- While whisking, pour in Guinness, milk, half-and-half, salt, pepper, and mustard.
- Bring to a simmer and cook until it thickens slightly, whisking frequently.
- Add cream cheese and 2.5 cups of cheddar, stir/whisk until completely smooth.
- Add pasta and stir to combine.
- Add remaining cheese and stir to melt.
- Sprinkle each serving with topping.
