Guinness French Onion Soup

INGREDIENTS

  • 8 c sliced onion (4-6)
  • 5 garlic cloves, minced
  • 2 Tbsp butter
  • 6 c (3.foo cans) beef broth
  • 1/2 c Guinness
  • 1 Tbsp soy sauce
  • 1 bay leaf
  • 1 tsp red wine vinegar
  • 1/4 tsp rosemary
  • 1/4 tsp thyme
  • salt & pepper to taste

PREPARATION

  1. Place onions, garlic and butter in slow cooker.
  2. Cook on HIGH 45 minutes to an hour--until onions are slightly softened.
  3. Add remaining ingredients except salt & pepper.
  4. Cook on LOW 8 hours.
  5. Remove bay leaf.
  6. If desired, serve with croutons and cheese.
