Guinness French Onion Soup
INGREDIENTS
8 c sliced onion (4-6)
5 garlic cloves, minced
2 Tbsp butter
6 c (3.foo cans) beef broth
1/2 c Guinness
1 Tbsp soy sauce
1 bay leaf
1 tsp red wine vinegar
1/4 tsp rosemary
1/4 tsp thyme
salt & pepper to taste
PREPARATION
Place onions, garlic and butter in slow cooker.
Cook on HIGH 45 minutes to an hour--until onions are slightly softened.
Add remaining ingredients except salt & pepper.
Cook on LOW 8 hours.
Remove bay leaf.
If desired, serve with croutons and cheese.
