Ham and Cheese Pot Pies

INGREDIENTS

  • 6 oz chopped ham
  • 1 c shredded cheddar
  • 2 c frozen broccoli cuts
  • 2 scallions, chopped
  • 1/2 c (1/2 tub) chive & onion cream cheese spread
  • 1 pie crust
  • 1 egg
  • 1 Tbsp water

PREPARATION

  1. Heat oven to 425
  2. Combine ham, cheddar, broccoli, and scallions.
  3. Microwave cream cheese spread in 15 second intervals for 1 minute or until melted.
  4. Add to ham mixture, mix well.
  5. Spoon into 4 ovenproof mugs
  6. Unroll pie crust
  7. Cut 4 circles from dough.
  8. Beat egg and water; brush on top edges of mugs.
  9. Top with pastry rounds.
  10. Brush lightly with egg mixture.
  11. Place mugs on baking sheet.
  12. Cut slits in crusts to vent.
  13. Bake 30-35 minutes or until golden brown.
