Hoppin' John

Ingredients

  • 2 tsp EVOO
  • 1 large onion
  • 6 oz chopped ham
  • 2 cloves minced garlic
  • 2 cans veggie broth or 1 box
  • 1 tsp Worcestershire sauce
  • 1/4 tsp dried basil
  • 1/4 tsp black pepper
  • 1 1/2 c long grain rice
  • 2 15oz cans blackeyed peas (2 cups)
  • 1 can 14.5oz diced tomatoes

Preparation

  1. Heat oil on medium. Add chopped onion, cook 2 minutes. Add ham and garlic. Cook, stirring for 1 minute.
  2. Add broth, raise heat to high. Add 1/2 c water. Stir in Worcestershire sauce, pepper and basil. Bring to a boil
  3. Add rice, stir and reduce heat to low. Cover and simmer till rice is tender, about 20 minutes.
  4. While rice cooks, drain and rinse blackeyed peas; set aside.
  5. When rice is done, add peas and tomatoes with juice. Cook, stirring till thoroughly mixed.
  6. Serve
