Hoppin' John

Ingredients

2 tsp EVOO 1 tsp
1 large onion, chopped 1/2
6 oz chopped ham 3 oz
2 cloves garlic, minced 1 clove
4 c veggie broth 2 c
1 tsp worcestershire sauce 1/2 tsp
1/4 tsp dried basil 1/8 tsp
1/4 tsp black pepper 1/8 tsp
1 1/2 c long grain white rice 3/4 c
2 cans blackeyed peas 1 can
1 can diced tomatos 1/2 can


Preparation

  1. Heat oil on medium. Add chopped onion, cook 2 minutes. Add ham and garlic. Cook, stirring for 1 minute.
  2. Add broth, raise heat to high. Add 1/2 (1/4) c water. Stir in Worcestershire sauce, pepper and basil. Bring to a boil
  3. Add rice, stir and reduce heat to low. Cover and simmer till rice is tender, about 20 minutes.
  4. While rice cooks, drain and rinse blackeyed peas; set aside.
  5. When rice is done, add peas and tomatoes with juice. Cook, stirring till thoroughly mixed.
  6. Serve
