Italian Chicken Bake

INGREDIENTS

  • 8 chicken thighs
  • 2 cans Italian-style diced tomatoes
  • 1/2 c pesto
  • 2 c shredded Mozzarella cheese
  • 2 Tbsp herb and cheese blend

PREPARATION

  1. Heat oven to 450 (original calls for 400)
  2. Pour cans of tomatoes into 13" x 9" pan and spread evenly
  3. Place chicken thighs, skin-side up, on tomatoes.
  4. Drop about 1 Tbsp pesto on each thigh, then when they're all dropped, spread with the back of a spoon.
  5. Bake 50-55 minutes until chicken is cooked through.
  6. Top with shredded mozzarella and sprinkle with herb and cheese blend and return to the oven and bake 5 minutes or until cheese melts.
