Italian Chicken Bake
INGREDIENTS
- 8 chicken thighs
- 2 cans Italian-style diced tomatoes
- 1/2 c pesto
- 2 c shredded Mozzarella cheese
- 2 Tbsp herb and cheese blend
PREPARATION
- Heat oven to 450 (original calls for 400)
- Pour cans of tomatoes into 13" x 9" pan and spread evenly
- Place chicken thighs, skin-side up, on tomatoes.
- Drop about 1 Tbsp pesto on each thigh, then when they're all dropped, spread with the back of a spoon.
- Bake 50-55 minutes until chicken is cooked through.
- Top with shredded mozzarella and sprinkle with herb and cheese blend and return to the oven and bake 5 minutes or until cheese melts.
