Lasagna Cupcakes

INGREDIENTS

  • 1 c ricotta cheese
  • 1/2 c grated Parmesan
  • 1 egg
  • 1 jar pasta sauce
  • 1 lb Italian sausage
  • 1 onion, chopped
  • 1 tsp jar garlic
  • 36 round potsticker wrappers (Gyoza)
  • 1 c shredded Mozzarella cheese

PREPARATION

  1. Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  2. On medium heat, cook sausage, onion and garlic until sausage is browned.
  3. In small bowl, mix ricotta cheese, Parmesan cheese and egg. In another small bowl, mix pasta sauce and sausage mixture.
  4. Place 1 round wrapper in bottom of each muffin cup; top each with 1 heaping tablespoon pasta sauce mixture and 1 tablespoon cheese mixture.
  5. Repeat layers, ending with pasta sauce mixture. Sprinkle each with mozzarella cheese.
  6. Spray large sheet of foil with cooking spray; place sprayed side down over pan.
  7. Bake 15 minutes. Uncover; bake 15 minutes longer.
  8. Let stand about 15 minutes before serving.
