Lemon Bars
INGREDIENTS
Base
- 2 c (250g) sifted flour
- 1/2 c (100g) granulated sugar
- 1 c (2 sticks) butter, softened
Top
- 4 eggs, beaten
- 2 c (400g) granulated sugar
- 1/3 c lemon juice
- 1/4 c (31g) flour
- 1/2 tsp baking powder
- 1/2 tsp lemon zest
- powdered sugar to sprinkle
PREPARATION
- Heat oven to 375
- Mix the butter into the flour and sugar with your hands until it clings together
- Press into 13" x 9" pan.
- Bake for 20-25 minutes, until lightly browned.
- For the filling, beat together eggs, sugar, lemon juice, and zest.
- Whisk together flour and baking powder.
- Stir into egg mixture.
- Pour over baked and cooled crust.
- Bake at 375 for 25 minutes.
- Cool and sprinkle with powdered sugar.
- Cut into 12 bars.
