Lemon Bars

INGREDIENTS

Base

  • 2 c (250g) sifted flour
  • 1/2 c (100g) granulated sugar
  • 1 c (2 sticks) butter, softened

Top

  • 4 eggs, beaten
  • 2 c (400g) granulated sugar
  • 1/3 c lemon juice
  • 1/4 c (31g) flour
  • 1/2 tsp baking powder
  • 1/2 tsp lemon zest
  • powdered sugar to sprinkle

PREPARATION

  1. Heat oven to 375
  2. Mix the butter into the flour and sugar with your hands until it clings together
  3. Press into 13" x 9" pan.
  4. Bake for 20-25 minutes, until lightly browned.
  5. For the filling, beat together eggs, sugar, lemon juice, and zest.
  6. Whisk together flour and baking powder.
  7. Stir into egg mixture.
  8. Pour over baked and cooled crust.
  9. Bake at 375 for 25 minutes.
  10. Cool and sprinkle with powdered sugar.
  11. Cut into 12 bars.
