Lemon Chicken with Asparagus Sheet Pan Dinner

INGREDIENTS

  • 6 Tbsp EVOO, divided
  • 1/2 c honey
  • 1 Tbsp soy sauce
  • 6 chicken thighs, bone-in
  • salt and fresh-ground black pepper
  • 1 large or 2 small lemons, sliced (you need 6 slices)
  • 1 bunch asparagus, ends snapped

PREPARATION

  1. Heat the oven (it says 400)
  2. Lay foil on rimmed baking sheet with some overhanging (see below) and spray with cooking spray.
  3. In a small bowl, combine 5 Tbsp EVOO with honey and soy sauce.
  4. Season chicken with salt and pepper. Place chicken, skin side up on foil on baking sheet. Lay a slice of lemon on each piece of chicken. Generously brush honey mixture over the chicken, reserving some. Bring up the foil to cover chicken and bake 30 minutes.
  5. Open the foil. Arrange the asparagus on one side of the pan and coat with the remaining 1 Tbsp EVOO and season with salt and pepper. Brush the chicken with another coat of the honey mixture. Return to oven and bake about 15 minutes or until chicken is 165 on thermometer.
