Loaded Baked Potato Casserole
INGREDIENTS
- 1 30-oz package frozen potato wedges
- 8 slices bacon, diced, cooked, drained
- 2 bunches scallions, chopped (whites and greens separated)
- 1 jar cheese dip
- sour cream
PREPARATION
- Heat oven to 400
- Spray 13" x 9" pan with cooking spray.
- Arrange potato wedges in prepared pan.
- Bake 10-15 minutes until thawed and beginning to brown.
- Top with half the bacon, white parts of scallions, and half of green parts of scallions.
- Pour cheese dip on top; sprinkle with remaining bacon.
- Bake 20-30 minutes or until cheese is melted and potatoes are tender.
- Top with sour cream and remaining green parts of scallions.
