Loaded Baked Potato Casserole

INGREDIENTS

  • 1 30-oz package frozen potato wedges
  • 8 slices bacon, diced, cooked, drained
  • 2 bunches scallions, chopped (whites and greens separated)
  • 1 jar cheese dip
  • sour cream

PREPARATION

  1. Heat oven to 400
  2. Spray 13" x 9" pan with cooking spray.
  3. Arrange potato wedges in prepared pan.
  4. Bake 10-15 minutes until thawed and beginning to brown.
  5. Top with half the bacon, white parts of scallions, and half of green parts of scallions.
  6. Pour cheese dip on top; sprinkle with remaining bacon.
  7. Bake 20-30 minutes or until cheese is melted and potatoes are tender.
  8. Top with sour cream and remaining green parts of scallions.
