Maple Roasted Sweet Potatoes and Carrots
INGREDIENTS
- 1 large sweet potato, unpeeled, diced
- 4 carrots, cut into 1" pieces
- 2 Tbsp coconut oil
- 2 Tbsp maple syrup
PREPARATION
- Preheat the oven to (it says) 400°.
- Line a baking sheet with parchment and toss all ingredients together on the sheet.
- Bake until tender when pierced with a fork, about 25-30 minutes, stirring a couple of times.
