Margarita Chicken Rice Skillet
INGREDIENTS
- 1/2 c zesty lime vinaigrette
- 8 chicken thighs
- 1 red bell pepper, chopped
- 1 onion, chopped
- 1 can chicken broth
- 1.5 c long grain white rice
- 1/2 tsp cumin
PREPARATION
- Heat 2 Tbsp dressing in mondo skillet on medium-high.
- Add chicken, cook 4 minutes on each side, till golden brown.
- Remove chicken from skillet; add pepper and onion.
- Cook and stir 5 minutes, or until crisp-tender.
- Add broth, rice, cumin and remaining dressing; stir.
- Bring to boiling; add chicken.
- Cover and simmer on medium-low for 30-35 minutes or until chicken is 165
- Remove from heat and let stand 5 minutes.
