Marsala Pork Chops

INGREDIENTS

  • 2 tsp EVOO
  • 4 pork chops
  • 2 Tbsp AP flour
  • 6 sliced bacon, diced
  • 1 leek, sliced
  • 1 shallot, chopped
  • 1/2 c marsala or sweet red wine
  • 1/2 c chicken stock
  • 1/2 c heavy cream
  • salt and pepper to taste.

PREPARATION

  1. Season the pork chops with salt and pepper.
  2. Heat oil in mondo skillet over medium.
  3. Cook chops until brown on both sides and cooked through..
  4. Remove and keep warm.
  5. Add bacon to skillet, Saute till crisp.
  6. Add leek and shallot; cook for 5 minutes.
  7. Stir Marsala and stock into skillet; cook 15 minutes.
  8. Whisk flour into cream; stir into skillet.
  9. Cook 5 minutes, until thickened.
  10. Return pork chops to pan. Simmer until heated through.
