Meaty Muffins

INGREDIENTS

• 1.5 lbs ground beef
• 3 eggs
• 2 scallions, chopped
• 3/4 tsp pepper
• 3/4 tsp salt
• 3 oz feta
• 5 Tbsp mild salsa

PREPARATION

1. Heat oven to 450 (says 400)
2. Oil 12 muffin cups
3. Mix meat with scallions, eggs, salt, and pepper.
4. Form into 12 balls. Place one in each muffin cup.
5. Press some feta into center of each ball, then cover it up.
6. Top each with a teaspoon of salsa.
7. Bake 15 minutes, or until cooked through.
