Mediterranean Pomegranate Stir-Fry
INGREDIENTS
2 boneless, skinless chicken breasts, cubed
1 tsp cumin
1/2 tsp coriander
1/2 tsp paprika
1 Tbsp EVOO
2 carrots, thinly sliced
1 onion, stringed
1/4 c pomegranate arils
PREPARATION
In a bowl, toss chicken with cumin, coriander, and paprika.
Heat oil over medium-high.
Add carrots and onions; cook, stirring, 2 minutes.
Add chicken; cook, stirring, 5 minutes.
Add pomegranate seeds, cook 1-2 minutes more.
Add a splash of water to reach desired sauciness.
Serve over rice.
