Mediterranean Pomegranate Stir-Fry

INGREDIENTS

  • 2 boneless, skinless chicken breasts, cubed
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp paprika
  • 1 Tbsp EVOO
  • 2 carrots, thinly sliced
  • 1 onion, stringed
  • 1/4 c pomegranate arils

PREPARATION

  1. In a bowl, toss chicken with cumin, coriander, and paprika.
  2. Heat oil over medium-high.
  3. Add carrots and onions; cook, stirring, 2 minutes.
  4. Add chicken; cook, stirring, 5 minutes.
  5. Add pomegranate seeds, cook 1-2 minutes more.
  6. Add a splash of water to reach desired sauciness.
  7. Serve over rice.
