Mexican Chicken Casserole

INGREDIENTS

  • 2 chicken breasts
  • 1/2 tsp garlic
  • 1/2 c chicken stock
  • 1 can Ro-Tel, drained
  • 2 oz cream cheese
  • 2 c shredded Jack or Co-Jack cheese

PREPARATION

  1. Preheat oven to 375.
  2. Cook chicken breasts and garlic in stock in skillet on medium until chicken is done.
  3. Shred chicken into 13" x 9" pan, discarding stock.
  4. Mix in drained Ro-Tel.
  5. Dot with cream cheese.
  6. Cover with cheese.
  7. Bake uncovered about 35 minutes or until slightly brown around edges.
