Mint Chocolate Chip Fudge
INGREDIENTS
- 3 1/4 c white chocolate chips
- 2 Tbsp butter
- 1 can sweetened condensed milk
- 2-3 tsp mint (not peppermint) extract
- green food coloring
- 3/4 c mini chocolate chips, divided
PREPARATION
- Line an 8" square pan with foil. Spray with cooking spray
- In a microwave-safe bowl, microwave white chocolate chips and butter on High for 1 minute. Let rest one minute.
- Stir. If not melted, microwave 30 seconds and let rest 30 seconds. Repeat if needed.
- Stir in milk and extract.
- Add food coloring to desired color.
- Let cool somewhat, then fold in 1/2 cup mini chips.
- Press into prepared pan.
- Sprinkle with remaining mini chips. Press slightly into fudge.
- Refrigerate 2 hours, then cut into squares.
- Store in an airtight container.
