Mint Chocolate Chip Fudge

INGREDIENTS

  • 3 1/4 c white chocolate chips
  • 2 Tbsp butter
  • 1 can sweetened condensed milk
  • 2-3 tsp mint (not peppermint) extract
  • green food coloring
  • 3/4 c mini chocolate chips, divided

PREPARATION

  1. Line an 8" square pan with foil. Spray with cooking spray
  2. In a microwave-safe bowl, microwave white chocolate chips and butter on High for 1 minute. Let rest one minute.
  3. Stir. If not melted, microwave 30 seconds and let rest 30 seconds. Repeat if needed.
  4. Stir in milk and extract.
  5. Add food coloring to desired color.
  6. Let cool somewhat, then fold in 1/2 cup mini chips.
  7. Press into prepared pan.
  8. Sprinkle with remaining mini chips. Press slightly into fudge.
  9. Refrigerate 2 hours, then cut into squares.
  10. Store in an airtight container.
