Mole Chicken
Ingredients
- 1/4 c raw sesame seeds
- 1/2 c raw slivered almonds
- 2 lbs chicken breasts or boneless, skinless, thighs, trimmed of fat
- 1/4 tsp ground cloves
- 1 Tbsp chili powder
- 1/2 tsp ground coriander
- 1/4 tsp anise seeds
- 1 dry California chili pod
- 1 yellow onion, chopped
- 1/3 c raisins
- 1 c water
- 1 cinnamon stick
- 3 garlic cloves, minced
- 1 14oz can diced tomatoes, UNdrained
- 1 6oz can tomato paste
- 1/4 c tequila
- 2 oz unsweetened chocolate
- salt to taste
Preparation
Use a 6 qt slow cooker. In a small pan, brown the seeds and almonds. Set aside to cool. Put the chicken into the crock. Cover with the seasonings. Put the dry chili pod into the crock. Combine remaining ingredients, including almonds and seeds, and pour over chicken. Cook on low for about 8 hours. Shred the chicken with two forks and serve over brown rice. Salt to taste.
