Old English Butterscotch

INGREDIENTS

  • 1 lb light brown sugar
  • 3/4 c water
  • pinch cream of tartar
  • 4 oz butter
  • 4 Tbsp cream

PREPARATION

  1. Cover a baking sheet with foil and spray LIGHTLY with cooking oil.
  2. Heat the sugar and water over low heat until the sugar dissolves and bring to a boil.
  3. Add a pinch of cream of tartar and stir in.
  4. Heat until it reaches hard crack stage--150 C or 302 F.
  5. Add the butter and cream and stir in.
  6. Pour quickly onto the tray,
  7. Leave it to cool until it starts to set.
  8. Score with lines where you want to break it.
  9. Leave overnight. Break into pieces.
