One Pot Bacon Ranch Chicken

INGREDIENTS

  • 6 slices bacon, diced
  • 2 chicken breasts, cut into bite-sized pieces
  • 2 c chicken broth
  • 2 Tbsp ranch dressing mix
  • 8 oz packages cream cheese, cut into cubes
  • 6 oz rotini (2 c)
  • 1.5 c shredded Monterey Jack cheese

PREPARATION

  1. Cook bacon in mondo skillet; remove with slotted spoon to paper towel
  2. Pour off what bacon grease pours off, but leave the remnants; cook chicken until white.
  3. Remove chicken to plate.
  4. Whisk stock and dressing mix in skillet.
  5. Add cream cheese and cook over medium about 2 minutes or until cheese starts to melt
  6. Add chicken, pasta, and 1 c of the jack cheese.
  7. Heat to boiling. Cover, simmer 14-16 minutes, stirring occasionally. Remove from heat.
  8. Sprinkle with remaining jack cheese and bacon.
  9. Let stand 3-5 minutes or until cheese is melted.
