Pomegranate and Pear Salad 
 INGREDIENTS (2 jar salads) 
 Dressing 
 
-  5 Tbsp sherry vinegar
  -  pinch of salt
  -  freshly ground black pepper to taste
  -  6 Tbsp EVOO
 
 
 Salad 
 
-  2 pears, cored and thinly sliced
  -  1 10 oz bag spinach, divided if making jar salads
  -  1 c pomegranate seeds
  -  1/2 c chopped pecans
  -  4 oz crumbled blue cheese
 
 
 PREPARATION 
 Dressing 
 
-  Whisk together vinegar, salt, and pepper.
  -  Slowly add EVOO, whisking until it thickens.
 
 
 Dinner Salad 
 
-  Toss pears, spinach, pomegranate, pecans, and blue cheese.
  -  Serve with dressing.
 
 
 Jar Salads 
 
-  Place 1/2 pear slices in each of two mason jars.
  -  Layer 2 c spinach in each jar.
  -  Add 1/2 c pomegranate seeds.
  -  Layer 1/2 c spinach.
  -  Add 1/4 c pecans.
  -  Add 1/2 c spinach
  -  Add blue cheese.
  -  Put 3 Tbsp dressing in cup on top.
