Pork Chops with Sauerkraut
INGREDIENTS
- 10 slices bacon
- 2 cans sauerkraut
- 4 pork chops
- salt and pepper
- 4 russets, cut 1/4" thick
- 2 medium onions, sliced
- 1 14.75 oz can stewed tomatoes
PREPARATION
- Heat oven to 375
- Spray 13" x 9" pan with cooking spray.
- Line the prepared pan with bacon.
- Scatter the sauerkraut over the bacon.
- Season chops with salt and pepper, then lay on top.
- Layer potato and onion slices over pork.
- Scatter tomatoes over the top.
- Bake for 2 hours or until potatoes are tender.
