Pork Noodle Bowl

INGREDIENTS

  • 2 pork chops, sliced into bite-sliced strips
  • 1/2 c bottled Asian salad dressing
  • 4 oz multigran noodles or spaghetti
  • 1 package broccoli or coleslaw mix

PREPARATION

  1. In small mixing bowl, combine pork with 1/4 c salad dressing.
  2. Cover and chill at least one hour.
  3. Cook pasta, drain and return to pot.
  4. Add remaining 1/4 c dressing to pasta, toss to coat.
  5. In large nonstick skillet, heat 1 Tbsp EVOO on medium-high.
  6. Cook pork, half at a time, for 3-4 minutes, stirring.
  7. Transfer pork to pasta pot; toss to coat.
  8. Add slaw to hot skillet.
  9. Cook, stirring, about 3 minutes or until beginning to wilt.
  10. Add to pasta mixture, tossing to mix well.
