Potsticker Dumpling Soup

INGREDIENTS

  • 1 box mushroom or veggie broth
  • 1 c water
  • 2 tsp fresh ginger
  • 2 10-oz pkg frozen pork potstickers with sauce packet
  • 1 c carrot shreds
  • 1 bunch scallions, sliced

PREPARATION

  1. In Dutch oven, combine broth, water, ginger and sauce packet from one of the the packages of potstickers.
  2. Bring to boil over high.
  3. Add potstickers, carrots, and most of the scallions, reserving a few for garnish.
  4. Cover and simmer 8-10 minutes or until potstickers are heated through.
  5. Serve, garnished with reserved scallions.

Note: If no sauce packet is included, add 2 tsp soy sauce and 1 tsp sesame oil
