Red Wine Braised Chicken Thighs

INGREDIENTS

  • 1 onion, chopped
  • 8 boneless, skinless chicken thighs
  • 1 packet slow cooker red wine braised roast seasoning mix
  • 1 c mini carrots, halved
  • 8 oz button mushrooms, quartered
  • 1 bag (14.4 oz) frozen pearl onions, thawed
  • 1/2 c red wine
  • 1/2 c water
  • 1/2 c chopped parsley

PREPARATION

  1. Spray crock with cooking spray.
  2. Place chopped onion in crock.
  3. Season chicken with seasoning mix and place on onions.
  4. Add carrots, mushrooms and pearl onions. Pour wine and water over everything.
  5. Cover and cook on LOW for 8 hours.
  6. Stir in parsley.
  7. Serve with rice.
