---++ Reuben Casserole -- Low Carb
---+++ INGREDIENTS
   * 1.5 lbs cooked corned beef, chopped
   * 2 small onions, grated on the wide opening of the grater/mandolin
   * 2 cans sauerkraut (14.5 oz)
   * 1 lb Swiss cheese, shredded
   * 8 oz cheddar cheese, shredded
   * 1 c Thousand Island dressing
   * 1/2 c mayonnaise
   * pepper to taste
---+++ PREPARATION
   1. Heat oven to 375.
   1. Grease or spray a 13" x 9" pan.
   1. Add ingredients in order listed to a large bowl.  Mix well.
   1. Pour into prepared pan.
   1. Bake 35-40 minutes, until it begins to brown around the edges.
