Root Beer Pulled Pork

INGREDIENTS

  • 1 white onion diced
  • 4 cloves garlic, coarsely chopped
  • 1 cup Imperial Sugar Dark Brown Sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 4 pounds boneless center cut pork loin
  • 1 (12 ounce) bottle root beer

PREPARATION

  1. Place onions and garlic in the bottom of the slow cooker.
  2. Combine sugar, salt and pepper in a bowl and coat meat with mixture
  3. Place the meat in the slow cooker on top of the onions.
  4. Pour the root beer around the sides of the slow cooker.
  5. Cook on HIGH for 4-5 hours or until the meat is tender and pulls apart easily.
  6. Shred the meat with 2 forks.
  7. Return to slow cooker with juices to keep moist OR serve with root beer BBQ sauce.
