Rustic Egg Bites

INGREDIENTS

  • 1 Tbsp avocado oil
  • 1 lb ground sausage
  • 12 large eggs
  • 2/3 c coconut milk
  • 2 Tbsp minced garlic
  • 1 Tbsp salsa
  • 1 tsp salt
  • 1/2 tsp pepper

PREPARATION

  1. Heat oven to 400. Grease 12-cup muffin pan with avocado oil.
  2. Cook sausage over medium-high until browned, breaking up with a spoon (about 5 minutes). Remove from heat and let cool about 5 minutes.
  3. Crack eggs into medium mixing bowl; add coconut milk, garlic, salsa, oil, salt, and pepper. Whisk to combine.
  4. Stir cooked sausage into egg mixture.. Pour into prepared muffin tin. Bake for 25 minutes.
  5. Store in fridge for up to a week in airtight container(s).
