Rustic Egg Bites
INGREDIENTS
- 1 Tbsp avocado oil
- 1 lb ground sausage
- 12 large eggs
- 2/3 c coconut milk
- 2 Tbsp minced garlic
- 1 Tbsp salsa
- 1 tsp salt
- 1/2 tsp pepper
PREPARATION
- Heat oven to 400. Grease 12-cup muffin pan with avocado oil.
- Cook sausage over medium-high until browned, breaking up with a spoon (about 5 minutes). Remove from heat and let cool about 5 minutes.
- Crack eggs into medium mixing bowl; add coconut milk, garlic, salsa, oil, salt, and pepper. Whisk to combine.
- Stir cooked sausage into egg mixture.. Pour into prepared muffin tin. Bake for 25 minutes.
- Store in fridge for up to a week in airtight container(s).
