Salmon Chowder
INGREDIENTS
- 3 Tbsp EVOO
- 1 white onion, chopped
- 1 c chopped celery
- 3 cloves garlic, minced
- 3 Tbsp flour
- 2 Tbsp lemon juice
- 6 c chicken stock
- 3 c Yukon Gold potatoes, diced
- 2-3 salmon fillets, cut into pieces
- 2 tsp dill
- salt and pepper to taste
- 1/2 c heavy cream
- 1/2 c potato flakes
PREPARATION
- Heat EVOO over medium-high in Dutch oven.
- Add onion and cook 4 minutes, or until beginning to look translucent and limp.
- Add celery and garlic and cook another 3-4 minutes.
- Add flour and stir till thickened.
- Add lemon juice, stock, and dill. Bring to a boil.
- Add potato and cook about 10 minutes, till tender.
- Add salmon, reduce heat to medium-low.
- Add cream, salt and pepper. Add potato flakes to thicken to your liking.
