Salmon Chowder

INGREDIENTS

  • 3 Tbsp EVOO
  • 1 white onion, chopped
  • 1 c chopped celery
  • 3 cloves garlic, minced
  • 3 Tbsp flour
  • 2 Tbsp lemon juice
  • 6 c chicken stock
  • 3 c Yukon Gold potatoes, diced
  • 2-3 salmon fillets, cut into pieces
  • 2 tsp dill
  • salt and pepper to taste
  • 1/2 c heavy cream
  • 1/2 c potato flakes

PREPARATION

  1. Heat EVOO over medium-high in Dutch oven.
  2. Add onion and cook 4 minutes, or until beginning to look translucent and limp.
  3. Add celery and garlic and cook another 3-4 minutes.
  4. Add flour and stir till thickened.
  5. Add lemon juice, stock, and dill. Bring to a boil.
  6. Add potato and cook about 10 minutes, till tender.
  7. Add salmon, reduce heat to medium-low.
  8. Add cream, salt and pepper. Add potato flakes to thicken to your liking.
