Scotch Eggs

INGREDIENTS

  • 2 lbs ground pork
  • 2 tsp chopped fresh sage leaves
  • 1 tsp fennel seed
  • &frac12 tsp grated nutmeg
  • $frac14; tsp dried marjoram
  • 2 tsp salt
  • 1 tsp black pepper
  • 12 eggs, hard cooked and peeled

PREPARATION

  1. Heat the oven to 350
  2. Line two baking sheets with parchment
  3. In a large bowl, combine pork, sage, fennel, nutmeg, marjoram, salt, and pepper. Form into 12 meatballs. Place on the lined baking sheets and flatten.
  4. Place one hard-cooked egg in the middle of each flattened meatball and wrap the meat around, leaving no gaps or holes.
  5. Bake until the sausage is cooked through, about 15 minutes. Serve hot. Refrigerate leftovers.
