Scotch Eggs
INGREDIENTS
- 2 lbs ground pork
- 2 tsp chopped fresh sage leaves
- 1 tsp fennel seed
- ½ tsp grated nutmeg
- $frac14; tsp dried marjoram
- 2 tsp salt
- 1 tsp black pepper
- 12 eggs, hard cooked and peeled
PREPARATION
- Heat the oven to 350
- Line two baking sheets with parchment
- In a large bowl, combine pork, sage, fennel, nutmeg, marjoram, salt, and pepper. Form into 12 meatballs. Place on the lined baking sheets and flatten.
- Place one hard-cooked egg in the middle of each flattened meatball and wrap the meat around, leaving no gaps or holes.
- Bake until the sausage is cooked through, about 15 minutes. Serve hot. Refrigerate leftovers.
