Slow Cooker Chicken Chili

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 2 cans (14 1/2 ounces each) diced tomatoes (optionally with green chilies) undrained
  • 1 can (15 ounces) tomato sauce
  • 1 package (1 ounce) Old El PasoŽ chili seasoning mix
  • 2 cans (15 1/2 ounces each) hominy or Posole, drained
  • Sour cream, if desired

Procedure

  1. Place chicken in green crock pot, mix tomatoes, sauce and seasoning and pour over chicken.
  2. Cover and cook on low for 7-9 hours
  3. Stir to break up chicken. Stir in hominy, cover and cook on low for 15-20 minutes until heated through. Serve with sour cream if desired.
