Ingredients

2 tsp EVOO 1 tsp
8 strips thick-cut bacon 4 strips
1 large onion, chopped 1/2
1 pound dried blackeye peas, rinsed and picked over 1/2 pound
16 oz diced ham 8 oz
4 cloves garlic, minced 2 cloves
8 c veggie broth 4 c
2 tsp worcestershire sauce 1 tsp
1/2 tsp dried basil 1/4 tsp
1/2 tsp black pepper 1/4 tsp
3 c long grain white rice 1 1/2 c
dash red pepper flakes dash
2 cans diced tomatos 1 can
1 tbsp salt 1/2 tbsp


Preparation

  1. Cook bacon in EVOO on medium until fat is rendered and bacon starts to brown. Add chopped onion and cook the onion is translucent. Add ham and garlic. Cook, stirring for 1 minute.
  2. Put bacon, bacon fat, and onion into crock along with vegetable stock, blackeyes, ham, garlic, basil, and pepper flakes. Stir to combine
  3. Cook in covered crock pot on low until the blackeyes start to become tender. About 3 to 4 hours.
  4. Add salt, rice, and tomatoes. Stir and cover again and cook until liquid is gone and rice is cooked. About 90 minutes to two hours.
  5. Fluff with fork and serve.
