Smothered Chicken with Bacon and Onion

INGREDIENTS

  • 8 slices bacon, cut into 1" pieces
  • 2 onions, cut lengthwise, then sliced crosswise
  • 1/3 c flour
  • 1/2 tsp pepper
  • 1.25 c chicken broth
  • 8 boneless chicken thighs
  • 1 bag egg noodles
  • 1 8oz tub cream cheese spread
  • 2 Tbsp milk
  • 1/2 tsp garlic powder

PREPARATION

  1. Cook and stir bacon in large skillet on medium until crisp.
  2. Remove wtih slotted spoon to paper towels
  3. Drain all but 2 Tbsp drippings.
  4. Add onions; cook 15-18 minutes or until golden brown.
  5. Add flour, pepper, and half the bacon, cook 1 minute.
  6. Whisk in broth until blended (will be thick)
  7. Put chicken in slow cooker, cover with onion mixture.
  8. Cook on LOW 4 hours.
  9. About 15 minutes before serving, cook noodles.
  10. Drain noodles.
  11. Remove chicken from slow cooker, reserving onion mixture in slow cooker.
  12. Mix cream cheese, milk and garlic powder till well blended.
  13. Add to onion mixture, mix well.
  14. Top noodles with chicken then with sauce. Top with bacon.
