Spaghetti Squash Fajita Bowls

INGREDIENTS

  • 2 spaghetti squash
  • 2 Tbsp EVOO
  • 1 red bell pepper, strips
  • 1 green or yellow bell pepper, strips
  • 1 large red onion, strings
  • fajita meat
  • 2 c shredded Mexican or jack cheese
  • 1 jar mild salsa
  • guacamole

PREPARATION

  1. Heat oven to 400.
  2. Cook the spaghetti squash in the microwave.
  3. Heat EVOO on medium-high. Add onion and cook till crisp-tender.
  4. Remove onion with slotted spoon.
  5. Cook pepper till crisp-tender, adding EVOO if necessary.
  6. Remove pepper with a slotted spoon.
  7. Cook fajita meat until done, adding EVOO if necessary
  8. Layer meat, onion and peppers in squash halves.
  9. Top with cheese.
  10. Bake until cheese melts, 10-15 minutes.
  11. Serve with salsa and guacamole.
