Spaghetti Squash Fajita Bowls
INGREDIENTS
- 2 spaghetti squash
- 2 Tbsp EVOO
- 1 red bell pepper, strips
- 1 green or yellow bell pepper, strips
- 1 large red onion, strings
- fajita meat
- 2 c shredded Mexican or jack cheese
- 1 jar mild salsa
- guacamole
PREPARATION
- Heat oven to 400.
- Cook the spaghetti squash in the microwave.
- Heat EVOO on medium-high. Add onion and cook till crisp-tender.
- Remove onion with slotted spoon.
- Cook pepper till crisp-tender, adding EVOO if necessary.
- Remove pepper with a slotted spoon.
- Cook fajita meat until done, adding EVOO if necessary
- Layer meat, onion and peppers in squash halves.
- Top with cheese.
- Bake until cheese melts, 10-15 minutes.
- Serve with salsa and guacamole.
