Strength's Garlic Chicken
Ingredients

large whole roasting chicken (3-4 lbs) |
6-8 |
whole heads garlic |
2 T |
olive oil |
1 T |
Dijon mustard |
salt and pepper |
to taste |
1 small can |
chopped olives |
3 T |
softened butter |
Rinse chicken, Pat dry Make a paste of olive oil and mustard and rub it all over the chicken, inside and out. sprinkle the inside of the chicken with salt and pepper. Break up the garlic and put whole cloves into the interior of the chicken.
Place chicken, breast side up, on a rack in a baking pan. Back at 400 for about 1.5 hours or until timer pops out. Set aside to cool.
While chicken is cooling, take a small spoon and carefully remove the garlic cloves from the interior cavity of the chicken.
Squeeze the roasted garlic into a bowl and combine with butter and olives and serve with the chicken.
